Today was day 1 of my veggie/fruit cleanse. It really wasn’t as bad as I thought it would be! I made it through the day snacking on some fruit in the morning and veggies in the afternoon. For lunch I made a delicious salad which included some soy bean sprouts for protein.
Drinking wise, the cleanse requires all natural juices or lots of water (8 glasses minimum a day). I decided to make my own tasty water by just adding some sliced up cucumbers to my usual water. Cucumbers make water taste extra refreshing and not to mention have antioxidant and anti-inflammatory properties.
Dinner was the real treat today! I never thought during a cleanse I would enjoy a soup so much! Here in Atlanta we are having record breaking lows (14 degrees right now!) so a warm, delicious soup is just what I needed! I also made sweet potato chips for the first time. I have included the recipe for the sweet potato chips at the bottom of this post. I hope you enjoy it as much as I did.
Sweet Potato Chips
1) Thinly slice 1 whole sweet potato
2) Heat oven to 400 degrees
3) Place sweet potato slices on aluminum foil
4) Brush the slices over with oil (coconut oil preferably)
5) Add a little bit of sea salt
6) Bake for 15 minutes or until they are lightly brown
