Happy Friday friends! Today I have quite the treat to share- a delicious watermelon salad recipe! I’ve teamed up with Georgia Watermelon Association (GWA) to create this delectable summer dish with you. I can honestly say that it is one of the best dishes I have ever put together. Everything about it screams summer! The watermelon is the star of the show but it is complimented by the juicy heirloom tomatoes and burrata cheese. I just honestly do not have enough good things to say about this easy to make dish!
Let’s Talk Watermelon
If you follow along my Instagram stories you know I’m obsessed with watermelon right now. It’s definitely one of my top cravings this pregnancy because it’s so sweet and hydrating. We pretty much always have fresh watermelon in our fridge at this point!
I teamed up with GWA because I always try to purchase local watermelons from Georgia. The one I used for this recipe is from Thomasville, Georgia and it was perfectly sweet. I used to never know HOW to pick out a watermelon and would just take a gamble but I recently learned what to look for. What about watermelon nutrition? In case you are wondering watermelon is a healthy summer treat. Watermelon is packed with water (which is perfect for this hot summer) and nutrients, contains very few calories, and is exceptionally refreshing. It’s also a good dietary source of both citrulline and lycopene, two powerful plant compounds. Watermelon may have several health benefits, including lower blood pressure, improved insulin sensitivity, and reduced muscle soreness. Not bad for such a delicious fruit, right?
Quick tip! If you cannot find burrata at your grocery store, you can easily switch it out for mozzarella. Both are mild, fresh cheeses that pair perfectly with watermelon. I hope you love this recipe as much as I do! Enjoy!
Ingredients
- 2 cups Georgia Watermelon, diced and seeded
- 2 large heirloom tomatoes, diced
- 1 Burrata cheese ball
- Olive Oil, drizzled
- Salt and Pepper, pinch of each
- Mint
Instructions
- After cutting watermelon and tomatoes, place in bowl.
- Add burrata cheese to middle of salad.
- Drizzle dish with olive oil then sprinkle pepper and salt.
- Garnish with mint and enjoy!
