Happy #foodiefriday my pretty friends! Today’s recipe is brought to you by The Fresh Market– one of my absolute favorite grocery stores to shop at. I’ve teamed up with them to create a delicious, easy and nutritious grilling recipe to end the summer with.
This recipe is not only super easy to make but its also packed with flavor and nutrients. It’s low in saturated fat, low in sodium, high in vitamin C, B12, B6, selenium, vitamin A, phosphorus and niacin. It’s also low in calories since you are using chicken breasts, a lean protein!
I created this recipe for a little picnic my husband and I had two weeks ago. We assembled the kabobs before we left to the park, which made it super easy to just pop them on the grill. We packed up our little picnic basket and headed to Piedmont Park- which is like Atlanta’s Central Park. We ate some Fresh Market Peach salsa to start with and poured two glasses of Riesling. Drew grilled up the kabobs in 15 minutes and we were all set for a romantic dinner!
A few pieces of advice- make sure you purchase harder {less ripe} peaches so they hold up well in the heat. Also, if you soak your chicken in apple cider vinegar or Italian dressing 30 minutes before grilling, it will give them more flavor {completely optional}. It will also keep them nice and moist during grilling!
Save money by shopping at The Fresh Market on Tuesdays and get all natural chicken breasts for $2.99/pound!! Steal! You can search for a for a location near you by clicking here.
Chicken and Peach Kabobs
1 Chicken Breast, chopped
2 peaches, sliced
1/2 red bell pepper
1/2 green bell pepper
1/2 yellow bell pepper
1/2 orange bell pepper
1/2 Vidalia Onion
1 Teaspoon Garlic Salt
- Soak your kabob sticks in water for at least 30 minutes. This will keep them from burning.
- Cut up peaches, vegetables and chicken in ~2 inch pieces. Set aside.
- Thread peaches, chicken and vegetables alternately onto the skewers. Season with garlic salt.
- Place loaded skewers on grill. Alternate sides so everything cooks evenly. Once chicken has cooked all the way through, pull away from grill.
Chefs Note: Make sure you use hard peaches. This way they will not fall apart when placed on grill.
Bon appetite!
