Happy Fourth of July weekend friends! Today kicks off a brand new summer series on the blog- foodie Fridays!! I will be teaming up with my partner in crime, Shelby from Shelby Rae Photographs, to bring you nutritious, easy summer recipes. Key word being easy- we promise not to show you anything complex or time consuming. We will also feature seasonal fruits and vegetables so you can buy them at your local farmers markets! Lets dive into our first recipe- whole wheat tomato peach toast.
Two summer staples in my kitchen are peaches and tomatoes. I just love how juicy and flavorful these two get during the hot summer months. They are also two versatile ingredients that can be used in savory or sweet dishes. They both are also packed with nutrients, especially tomatoes. Tomatoes contain antioxidants, vitamins A, C, and K, as well as significant amounts of vitamin B6, folate, thiamin and lycopene, which is a carotenoid pigment that has been linked to helping prevent cancer. The health benefits of tomatoes doesn’t stop there- a few other benefits of eating tomatoes include improved eye sight, good stomach health, and reduced blood pressure, as well as relief from skin problems and urinary tract infections. Furthermore, tomatoes can increase digestion, stimulate blood circulation, reduce cholesterol levels, prevent premature aging, and reduce inflammation. Pretty amazing that something so delicious can also be so good for us, right?
Peaches are also healthy- they contain calcium, potassium, magnesium, iron, manganese, phosphorous, zinc, and copper. Peaches are low in calories, contain no saturated fat or cholesterol, and are a good source of dietary fiber. Is that just peachy!
Ingredients {serves 3}
6 pieces of whole wheat toast, sliced
3 large heirloom tomatoes, sliced
2 large peaches, sliced
6 basil leaves
1 tablespoon honey
1 tablespoon mayonaise {optional}
Directions
- Begin by prepping all your ingredients. Wash and slice tomatoes and peaches. Wash basil leaves.
- On a medium/high heat skillet, place sliced peaches for five minutes or until lightly grilled.
- Toast your bread.
- Optional: spread mayonnaise on each slice of toast.
- Stack basil, tomatoes and grilled peaches on toast.
- Drizzle honey over toast. Enjoy!
Chefs Note: When picking out whole wheat loaf, make sure the very first ingredient is always whole wheat grain. A lot of companies will be misleading and call multigrain bread “whole wheat” when it is not.
