I have a confession to make- I have never eaten brussels sprouts until recently. In my defense, I grew up in a Colombian household where we ate authentic Colombian cuisine. In Colombia, vegetables are incorporated into meals as rice, casseroles, and soups. You never eat veggies on the side like you do here. I remember thinking my friends were so weird for ordering a side of broccoli when we went out to eat- actually I still think they’re weird. Broccoli unfortunately didn’t make the cut for tasty vegetables in my book. But a new vegetable for me is the magical brussels sprouts. These little babies are PACKED with nutrients and if cooked right- can be incredibly delicious. Here are a few fun, nutrition related facts about these little greens:
- In Chinese medicine, they are prescribed to help with digestion. There have been many U.S. studies done on the relationship between this vegetable and cancer prevention. Brussels sprouts are able to provide special nutrient support for the body’s detox system, antioxidant system, and inflammatory/anti-inflammatory system, all of which are important for fighting cancer.
- Like all fresh vegetables, they’re naturally low in sodium and fat, but they have a ton of vitamins A, K, C (more than an orange), B6, Folate, potassium, fiber, iron, selenium, and calcium, plus all those antioxidant, cancer-fighting compounds mentioned above.
- The fiber related nutrients in brussels sprouts bind with intestinal bile acids, helping them to pass out of the body. This forces the body to replenish lost bile acids by tapping into the existing supply of cholesterol, which reduces it.
Here is a little recipe I created last night. If you are a truffle lover like me- you’ll melt when you try it! { P.S- Truffle oil can be pretty expensive so I advice using Williams Sonoma’s thats currently on sale for $15.95 a bottle.} If you desire bold flavors in your life- throw some fresh goat cheese on top like I did! This recipe is very versatile- you can bake the brussels sprouts OR you can sauté them like I did. You can add truffle oil or keep it simple by just adding a little more olive oil. And lastly, you can add goat cheese for a bold flavor or keep it simple with no added cheese. Regardless of what you do- I hope you enjoy this little dish!
White Truffle Brussels Sprouts + Goat Cheese
Ingredients:
16 oz bag of fresh brussels sprouts
2 tablespoons olive oil
2 teaspoons truffle oil
½ cup goat cheese crumble
Garlic salt + Pepper to taste
Directions:
- Begin by adding olive oil to pan on medium heat
- Follow by adding brussels sprouts to pan (if you have some big sprouts- cut them in half to speed up cooking process)
- Allow to cook for a 5 minutes then season with garlic salt and pepper
- Add truffle oil and allow to cook for another 5 minutes. Stir around to avoid over browning
- Once the sprouts have reached a perfect brown (your personal preference) remove from eat
- Serve on dish topped with goat cheese
