Happy Tuesday friends! And happy last day of National Peach Month! I couldn’t let the month end without sharing one of my absolute favorite recipes- Peach Cobbler. Have you ever had it? This is a Southern staple as peaches grow best in our neck of the woods. Georgia is after all the peach state! This recipe is super easy compared to others I have tried. I also tried to cut back on sugar as I found most cobblers to be too sweet. You can add more sugar if you prefer a sweeter cobbler. Super easy fix! But between the sugar in the recipe, the juicy peaches and the ice cream- this recipe is a perfect balance of sweetness.

Serving Size
I created this recipe to be made in small batches. Fresh peaches do not last long so I found that by making it in a small batch, we lowered the chance of having to toss leftovers. This is a PERFECT recipe for an intimate dinner party or just for the family. You can easily feed 4-6 people depending on how big of a serving size you distribute. For reference, I used a small 1.4 qt (8 x 5.75 x 2 in) pan I found at Publix to bake the cobbler,
Alternatives
I actually made the cobbler pictured above with gluten free flour from Bob’s Red Mill. I use their 1-to-1 Baking Flour. I did this because I wanted to make sure the recipe worked as a gluten free option. The result-you can easily make this gluten free without changing the consistency or recipe. Yeah!
You can also make this recipe dairy free by using a plant base butter and skipping the ice cream. Or you can use a plant based ice cream!
Should I Peel the Peaches?
This is completely up to you. I personally don’t peel my peaches because I want the extra fiber and flavor the peel contains. Also, it makes this recipe so much easier to make if all you have to do is rinse and slice!

Ingredients
Peach Filling
- 3-4 large fresh peaches, sliced
- 1 tablespoon sugar
Cobbler Topping
- 1/2 cup salted butter, melted
- 1/2 cup sugar
- 1 teaspoon vanilla
- 1 cup flour
- 1 teaspoon baking powder
- vanilla ice cream for serving
Instructions
- Preheat the oven to 350 degrees. Add peaches and sugar, and mix directly into 1.4 qt (8 x 5.75 x 2 in) pan.
- Mix the butter, sugar, vanilla, flour and baking powder until a cookie-dough-like batter forms.
- Place scoops of the mixture over the top of the peaches. Spread with a spoon or with your fingers.
- Bake for 45 minutes. At this point it should be juicy and bubbly around the sides.
- To get a thick saucy peach base, let it stand for 20-30 minutes before serving with some vanilla ice cream.
