Happy Monday friends! Let’s kick off Valentines week with a delicious apple and gin cocktail featuring Superfresh Growers Pink Lady apples. These apples add the perfect amount of sweetness and pink color to this pretty little cocktail! In case you missed it, you can watch my recipe reel by clicking here.
This is a really fun cocktail to make for any occasion but thanks to the natural color of the Pink Lady apples, it’s perfect for Valentine’s Day. The apple reduction is easy to make and the best part is you can keep the puree discard to eat later. You can also make a bigger batch of the reduction and use for apple juice, apple cocktails or adding to yogurt or granola bowls. I hope you enjoy making this recipe as much as I do!
Ingredients
Cocktail
- 2 ounces of Gin
- 3 ounces of Pink Lady Apple Reduction
- 1 ounce simple syrup
- 2 ounces lemon juice
- 1 egg white
- Ice for shaker
Pink Lady Apple Reduction
- 1 Pink Lady Apple, diced with skin on
- 3/4 cup water
- 1 ounce lemon juice
- Pinch of salt
Instructions
- Start with making your Pink Lady apple reduction by dicing up 1 large Pink Lady apple and placing it into a medium sauce pot. Add water, lemon juice and salt. Cook over low heat until apples are soft (~10 minutes). Remove from heat and allow to cool.
- Once reduction is cool, use a potato smasher to smashed soft apples. Strain and set liquid reduction aside. Save apple purée to enjoy another time.
- In a shaker, add gin, reduction, simple syrup, lemon juice, egg white and ice. Shake well.
- Pour cocktail and top with cut apples, lemon swirl and/or bitters. Have fun with it!
