Happy Monday friends! Today I have a very special recipe to share with you featuring Happy Egg Co. It’s super easy, delicious and healthy- my favorite trio! This recipe is perfect for the whole family and can be served at any meal. I’ve actually made this for dinner a few times and just threw chicken sausage into it.

Their hens are also Free-est of the Free Range™ which means they get to enjoy roaming around the farm and not being kept in tiny cages. A lot of people actually don’t really understand what “cage free” vs “free range” means. Cage-free hens do not live inside wire cages, but they never go outside. Cage-free permits just 1.5 square feet of space per bird and always inside the barn. There is little ability to engage in natural behaviors. Unless the packaging says otherwise, you are mostly likely buying eggs from caged hens. These hens spend their entire lives indoors in overcrowded wire cages without even enough space to stretch their wings. Unfortunately, most of the eggs farmed in the US still come from caged hens.

Egg Nutrition
If you follow along my Instagram account you know how much I love to eat eggs. It’s actually one of my favorite breakfasts! Whether I’m in a hurry and eat a hard boiled egg or make a delicious omelette on the weekend, eggs are one of my go-to breakfast proteins! On top of being delicious, eggs are also packed with nutrients.
At just 78 calories each, eggs are an efficient, rich source of protein and vitamins. A large egg contains about 6 grams of protein and various vitamins and minerals such as B2, D, B6, B12, zinc, iron, and copper.
For a long time there was a lot of controversy over if eggs were truly healthy. But after much research, eggs have been proven to actually be very nutritious. The American Heart Association suggests one egg (or two egg whites) per day for people who eat them, as part of a healthy diet. Also, a study published last May in the journal Heart found that an egg a day just may keep the doctor away!
Ingredients
- 2 Happy Egg Co eggs
- 1 medium/large sweet potato
- 2 tablespoons olive oil
- 1 teaspoon cornstarch
- 1/4 teaspoon garlic salt
Instructions
- Preheat the oven to 375°F.
- Wash the sweet potato and remove any bad spots, leaving the skin on. Line a baking sheet with parchment paper. Grate the sweet potato with the large side of a box grater onto the baking sheet. Spread the shreds into an even layer, then drizzle the top with the olive oil and sprinkle with the cornstarch, garlic salt. Mix it all together with your hands until evenly combined, then shape the potato into 2 loose mounds.
- Bake 30 minutes until lightly browned on the outsides and soft on the inside. Carefully remove the sweet potato hash browns from the baking sheet with a spatula.
- While sweet potato is baking {I wait until the last 5 minutes}, fry the eggs. In a small pan, warm oil over medium heat. Crack egg into pan. Be careful when frying not to break the yolk. Fry until the outside of the egg becomes all white and the yolk starts to slightly firm up. Place on top of toast.
- Top with Everything Bagel Seasoning or a pinch of salt and pepper. Enjoy!
