We are more then half-way there my friends! Today was a lot better than yesterday. I had a late night snack of fresh edamame which helped with not feeling weak in the morning. I had my usual fruit for breakfast, 1 banana, grapes, and tangerines. For lunch I met up with a friend to try a new restaurant in Sandy Springs.
The restaurant we went to was Cibo E Beve, a intimate Italian-American restaurant. Right when we walked in I fell in love! It was a speak easy style restaurant that had the cutest furniture and decorations. Want to see for yourself? Check out their virtual tour here.
Staying faithful to my cleanse, I went with their Rocket & Beets salad. My friend asked our waiter what they were known for and he said they were famous for their changing menu and fresh ingredients. He then suggested she get the short rib sandwich and a cup of their popular Tuscan Kale and Bean soup.
My salad was very fresh but not very filling. I can’t wait to go back and try some of their house specials! I told our waiter about my cleanse (to justify only getting a salad) and he said his manager was actually doing a similar cleanse. His manager then came to our table and talked to me about his cleanse and how he understood what I was going through. On our way out he gave me a card with a free dessert! He said if I complete the cleanse that he will treat me to a dessert the next time I came back. How incredibly sweet and encouraging! You can see why I’m such a fan of Cib E Beve now! 🙂
For an afternoon snack I made a delicious strawberry -pineapple protein smoothie. Who says we can’t have a little fun while doing this cleanse?
For dinner I made vegetarian lettuce wraps. I used California Veggie Burgers as my “meat” and cooked them with white onions. I cut tomatoes, celery, and lemons to eat with the wraps. I also made a light balsamic reduction to use as our lettuce sauce. I was surprised how delicious these turned out! Andrew and I will be doing these in the future for Meatless Mondays.
Vegetarian Lettuce Wraps
1 box of Veggie Burgers (4 patties)
1/2 cup white onions
2 tomatoes
1/2 cup diced cucumber
1 lemon
1 head of fresh lettuce
1 tbs coconut oil
1) Add coconut oil to pan over medium heat
2) Add chopped onion to pan and allow to brown
3) Add 4 veggie patties to pan and shred them up (imagine its ground meat)
4) Allow the patties to cook for about 5 minutes until they turn a brown color
5) Serve on lettuce wraps
