Tucked away in the heart of midtown Atlanta, lies an Italian gem that serves the best gluten free pizza in the city called Ribalta. So what exactly makes this the best gluten free pizza in Atlanta you ask? Well it all comes down to the quality of dough they use. Not only is their gluten free dough made of the highest Italian product on the market, but their regular imported flour is less processed than the regular American white flour. The doughrises through a process for 72 hours as it does in a true Neapolitan kitchen. It’s digestive qualities, crispness, and delicious flavor will leave you wanting more and more! Ribalta offers a complete dining experience that’s reflective of the Italian city’s rich, unique and vibrant culture. Owned and operated by Italians dedicated to the craft and art of Italian cuisine as well as the creativity, the communality and the gregariousness of their native Naples, Ribalta is a true depiction of what Italian dining should be like.
Yesterday I had the pleasure of trying out their famous gluten free pizza with my Dad. From the moment we walked into the restaurant, located on the corner of 11th Street and Peachtree, we were greeted with an Italian benvenuto (welcome) by manager Gabriel. Our server, Joe, was very friendly and knowledgeable of all things gluten free. He recommended we start out with their famous homemade Limade and fresh meatballs. After taking the first sip of this incredibly fresh Limade, I immediately could tell why it was a local favorite! The meatballs were cooked to perfection and served in a homemade tomato sauce. Joe informed us that all their sauces and doughs come directly from Italy and made fresh every day. The freshness of their high quality ingredients was evident by how delectable every bite was.
As for the pizza, we ordered their most popular gluten free option- The Nobile which came with mozzarella, gorgonzola, shaved black truffle, and truffle oil. We also tried a non gluten free Capricciosa in order to taste the difference in the dough. The Capricciosa came with mozzarella, mushrooms, prosciutto cotto, artichokes, and olives. Both pizza’s were incredibly delicious but the winner was The Nobile. My Dad, who had never had gluten free pizza, could not believe how delicious a pizza like this could be. The pizza was perfectly crisp and full of flavor. It was honestly the best pizza I have ever had! The regular dough was delectable as well- it was soft and melted in your mouth with every bite. All the toppings were fresh and added great flavor to the pizza.
For dessert we were able to try a famous Italian dish called Affogato. This authentic dessert was made up of a truffle gelato drowned in expresso. This dessert was like nothing I have ever had before- a delicately sweet gelato mixed with a strong expresso made for a dynamic dessert! I strongly recommend you leave room to try this amazing Affogato!
Whether you are looking to try an authentic Italian pizza or you want to give the gluten free a try, Ribalta should be your destination. Ribalta not only prides themselves in serving fresh, organic food but also in providing their diners with an authentic Italian experience.
A very special thanks to Gabriel and Joe for the wonderful dining experience at their restaurant. And a special thanks to Vanessa from Bill Kaelin Marketing for this wonderful opportunity.
