Hi Friends! Thanks for stopping by. Today I want to share with you a new recipe I learned to make this past week at So Gourmet Cooking Classes. These fun cooking classes are offered all year in Pensacola, Florida at the Bodacious Olive. Check out their website for more information!
I signed up for this specific class because I strongly believe its important to be able to cook for all your guests, especially those with special food diets. I’m sure over the past few years you have heard about the gluten free diet that many celebrities like Victoria Beckham have been doing. Some people choose to do the gluten free diet for personal reasons but others genuinely cannot tolerate gluten. So what exactly is gluten? Gluten is a protein composite found in wheat and related grains, including barley and rye. Here are a few pictures of some gluten free dishes we made in class:
If you want the full recipes to any of these please e-mail me! I’d love to share them with you! Keep in mind that these recipes are raw so you serve them cold or room temperature. In order to preserve the highest amount of nutrients, raw food is not heated. But if you like your food warm, like me, you can throw these in the oven for a few minutes. Here is the recipe to my favorite dish we made- the tomato basil bisque.
Tomato Basil Raw Bisque
Ingredients
*5-6 large ripe tomatoes, quartered
*4 cups Raw cream sauce
*5 garlic cloves, grated
*1/2 cup mixed herbs, such as tarragon, basil, flat-leaf parsley, etc.
*1 teaspoon sea salt
*1 1/2 teaspoon fresh ground black pepper
*1 teaspoon ground cumin
*1/2 teaspoon ground cayenne pepper
*1 teaspoon paprika
Directions
1) Put the tomatoes into a food processor and blend until coarsely chopped and juicy.
2) Whisk together the raw cream (see bellow for recipe), pureed tomatoes in a large bowl and blend well.
3) Add garlic, tarragon, salt, pepper, cumin, cayenne, and paprika. Stir well to combine.
4) Let the soup sit for an hour or so until the flavors combine.
Raw Cream Sauce
2 cups cashews
2 cups pinenuts
4 cups coconut milk
3 large garlic cloves
1 teaspoon sea salt
Black pepper to taste
Place all ingredients in a blender and process until smooth
The class was taught by these two lovely Chefs! Chef Sue (on right) is the founder of Gourmet Mom Sauces which can be purchased at Fresh Market and other fine grocery stores. She is very knowledgeable of healthy eating and enjoys teaching about it. Chef Betsy (on left) is a Certified Holistic Health Coach and Certified Raw Foods Chef/Educator. These two ladies did an amazing job educating us about the positive outcomes of eating raw.
