First up is a recipe I made earlier this summer {during peach season} featuring Organic Girl butter plus greens. I added peaches and barley to it and it was SO good! If you are lucky enough you may still find peaches but if you not, try it with other fruit like strawberries, pears or apples. Barley is super easy to find and make. I love cooking barley or farro because they are packed with nutrients. The benefits of barley are mostly attributable to the eight essential amino acids which it contains, meaning that it represents a complete protein in our diet. It is also an excellent source of dietary fiber, which keeps our bodies toxin free and acts as a fuel source to the friendly bacteria of our large intestine.
Peach Barley Salad
Ingredients
1 box of Organic Girl Greens
1 washed, sliced peach or other season fruit
1 cup of barley
Instructions
- Follow directions on back of bag to prepare barley. Allow to cool after preparing.
- Wash and slice fruit.
- Placed greens in bowl, top with fruit and cold barley.
- Sprinkle desired dressing.
