Happy Wednesday friends! Today I have a very special tailgating recipe to share with you today featuring Rio Luna Organic Diced Green Chiles. What I like about this recipe is that it’s not only super easy to make, but it’s packed with flavor! The delicious flavor comes from the diced red bell peppers and the green chiles. It does not get much better than tortillas stuffed with cream cheese and chicken, right??
Another great thing about this recipe is that you can make them the night before your big tailgating party! We ate these for lunch the next day and they were delicious! Husband and toddler approved!
Recipe Details and Tips
For this recipe I used shredded chicken breast that I boiled earlier that day. If you are pressed for time, you can always buy a rotisserie chicken. I also used 1/3 Less Fat Neufchatel cream cheese to keep the fat content and calories down. Never heard of American Neufchâtel? You probably have seen it at the grocery store but never think to grab it. American Cream Cheese and American Neufchâtel can be used interchangeably. Both are creamy and spreadable. So what is the biggest difference between the two? Glad you asked! It simply comes down to the amount of fat that is in each one. Neufchâtel is made using milk exclusively (23% milk fat), and cream cheese is made with milk and cream (33% milk fat). This means that Neufchâtel contains a third less fat, and, even though it is usually marketed as a reduced-fat option to cream cheese, it’s delicious and tastes pretty much just like regular cream cheese (in my opinion!).
Lastly, I used spinach tortillas to add vitamins where I can. The red bell peppers and Rio Luna Diced Green Chiles add the perfect kick to each bite! Ingredients
- 1 (8-oz) package 1/3 Less Fat Neufchatel cream cheese, softened
- 1 cup cooked shredded chicken
- 1 tablespoon Rio Luna Organic Diced Green Chiles
- 1/4 cup chopped red bell pepper
- 1/4 tablespoon garlic salt
- 4 or 5 large burrito tortillas (10-inch), spinach and/or whole wheat
Instructions
- Mix softened Neufchatel cream cheese with chopped chicken, Rio Luna Organic Diced Green Chiles, red bell pepper and garlic salt together.
- Spread about 1/4 cup of chicken mixture evenly on each tortilla.
- Roll the tortilla up gently, yet tightly to make sure it holds together and keeps its shape.
- Refrigerate for about 30 minutes to firm up the softened cheese. Cut off ends of tortilla roll and cut into 1-inch slices. Enjoy!
