Happy Tuesday friends! It’s finally cooling down here in Atlanta so of course I pulled out all my fall clothing and favorite fall recipes. I don’t know about you but I sure do love a delicious, warm soup when its cold outside! Today I want to share with you my Chicken Tortilla Orzo Soup recipe. This low fat healthy option is not only super easy to make, but also full of flavor. Hope you like it as much as I do!
Chicken Tortilla Orzo Soup (6 servings)
Ingredients
1/2 cup whole wheat orzo
2 cloves garlic, minced
1/2 cup onion, diced
2 cups low sodium chicken stock
3 cups water
1/2 cup frozen corn
1 (28 ounce) diced tomatoes
1 (4 ounce) green chiles
1 cup shredded chicken
1 teaspoon cumin
1 teaspoon chile powder (add more to make spicy)
1/2 teaspoon oregano
2 tablespoons cut cilantro
1 sliced lime
1 sliced avocado
Tortilla Chips (to serve)
Directions
1. In large pot overr medium heat bring to boil water, chicken stock, garlic.
2. Once boiling add orzo, tomatoes, green chile, cumin, chile powder, oregano, corn, and chicken. Allow to cook on low heat for 30 minutes.
3. Season with salt and pepper to taste
4. Serve in bowls. Add cilantro, lime, avocado and tortilla chips. Enjoy!
