Happy Tuesday pretty friends! Raise your hand if you are still obsessed with avocado toast! Both mine are raised! I keep finding different ways to eat it so I honestly don’t think I will ever get tired of it! It’s so easy and affordable to make at home. I often see it on menus for $10-$12 a pop! You can make all FOUR of these for under that price. Right now avocado’s are less than $1 each and I only used one avocado to make these four pieces. One avocado goes a long way!
Another reason I love avocado toast is almost any fruit or vegetable goes well with it! I can usually find items in my fridge that will pair well with my avocado toast. For example, for these four I used fresh strawberries, cilantro, zucchini noodles and quail eggs! Wait, what kind of eggs?! Hopefully that did not alarm you but I use quail eggs for this specific recipe. I get mine at my local farmers market for $4 for a dozen. In my country, Colombia, we eat a lot of quail eggs and throw them on top of anything including hot dogs! They are much lower in calories {because of the size} and add a lot of flavor to your dish. I like using them for avocado toast because I can still get the delicious flavor of egg {yes, they taste just like chicken eggs!} but with less calories.
To make my avocado toast I use the same base on all four options-
- 1 avocado
- 1/2 tablespoon apple cider vinegar
- pinch of garlic salt
I then top with whatever ingredients I can find. For the toast pictured below I used Dave’s Killer Bread, tomatoes, 2 quail eggs and topped with Trader Joe’s Everything Seasoning. This specific recipe {2 pieces of avocado toast} is 390 calories, 12 grams of protein, 16 grams of fiber, and 25 grams of fat. It’s also contains potassium, vitamin A, vitamin C, calcium and iron. So yummy!!
