Happy Friday friends! As we continue with National Nutrition Month on the blog, I want to share another healthy recipe with you. If you follow along my Instagram you know how much I love egg based recipes. Especially now that I have chickens that give us yard fresh eggs every day!
This recipe is super easy to make and is delicious and nutritious. The creamed mustard and arugula provide strong flavors while the bread and the egg balance them out. I recently tried creamed mustard for the first time and loved it! I hope you will enjoy this recipe as much as I have!
Egg Nutrition
For a long time there was a lot of controversy over if eggs were truly healthy. But after much research, eggs have been proven to actually be very nutritious. The American Heart Association suggests one egg (or two egg whites) per day for people who eat them, as part of a healthy diet. Also, a study published last May in the journal Heart found that an egg a day just may keep the doctor away!
At just 78 calories each, eggs are an efficient, rich source of protein and vitamins. A large egg contains about 6 grams of protein and various vitamins and minerals such as B2, D, B6, B12, zinc, iron, and copper. More reason to make this delicious recipe, right?
Ingredients
- 4 eggs
- 4 slices of toast
- 1/4-1/2 cup washed arugula
- 2 tablespoons plan Greek Yogurt*
- 1 teaspoon seeded dijon mustard
- Everything Bagel Seasoning
Instructions
- Toast bread in oven for 5-10 minutes.
- Mix greek yogurt with mustard until smooth consistency.
- In a small pan, warm oil over medium heat. Crack egg into pan. Be careful when frying not to break the yolk. Fry until the outside of the egg becomes all white and the yolk starts to slightly firm up.
- Place on top of arugula and toast.
- Sprinkle Everything Bagel Seasoning.
*Ingredient Tips: If Greek yogurt is too strong for you, try using sour cream instead.
