Hi friends! I hope you had a wonderful weekend and survived a dreary Monday. I had such a great weekend in Asheville with my hubby! It was our friends birthday so we all decided to rent a cabin and celebrate at Asheville’s Oktoberfest. Such a fun experience! Today I wanted to share a delicious recipe my best friend and I like to make. It’s a white lasagna that is incredibly easy to make. You can make it vegetarian or add lean white chicken to it. Either way taste delicious and is good for you.

It was our friends birthday so we all decided to rent a cabin and celebrate at Ashevilles Oktoberfest. Such a fun experience! Today I wanted to share a delicious recipe my best friend and I like to make. It’s a white lasgna that is incredibly easy to prepare. You can make it vegeterian or add lean white chicken-both taste delicious and are good for you.
White Veggie Lasagna
1 box of gluten free (or whole wheat) oven ready pasta
1 can low sodium cream of mushroom
1 minced garlic clove
1/2 cup diced white onion
1/4 cup low sodium chicken stock
1 yellow squash
1 zucchini
1 teaspoon olive oil
1 cup shredded chicken (optional)
1. Place large sauté pan over medium heat. Add olive oil followed by onions and garlic. Allow to cook together but do not brown onions. Allow them to get transparent.
2. Add cream of mushroom. If you want to add chicken, add now. Stir together and allow to cook for 5 minutes. Remove from heat and allow to cool.
3. In baking dish line with a little sauce. Carefully line pan with first set of pasta. Add sauce over pasta.
4. Carefully arrange squash and zucchini. Add sauce over vegetables.
5. Repeat steps. Add pasta. Add sauce. Arrange squash and zucchini. Add sauce.
6. Make as many layers as you want. Final step is to add chicken broth over lasagna (this will make sure pasta properly cooks).
7. Bake in oven at 350 degrees for 20 minutes. Make sure pasta is thoroughly cooked by cutting through with a knife.
