Happy Tuesday friends! Today I want to share a new recipe with you that is SUPER easy and quite delicious! Believe it or not this was the first time I’ve ever made energy balls. I always saw them on Instagram and Pinterest but I never really thought about making them. That is until I went to juice shop and they were selling energy balls for like $4 each! They looked really good but I couldn’t justify spending $4 on each ball so I decided to try making them at home!
I had all these ingredients at home so I grabbed Robinson and we worked on them together. We made them in less than 15 minutes and ate almost all of them in one sitting! Even my husband enjoyed them! I also crumbled some up and tossed them on top of my yogurt! So they are basically also granola balls! I hope you enjoy these as much as we did!
Ingredients
- 1 1/4 cup old fashioned oats
- 1/2 cup ground flaxseeds
- 1/2 cup smooth almond butter
- 1/3 cup honey
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 2 tablespoons dark chocolate chips
- Sea Salt Flakes (these are my favorite from Amazon)
Instructions
- In a large bowl, combine everything together using a spatula. It should all come together and form a sticky but slightly crumbly batter. If the mixture is too dry, add a bit more almond butter and honey. If the mixture is too sticky, add more oats.
- Cover the bowl and place it in the refrigerator for about 10 minutes. This will make it easier to press into balls.
- Press and roll the batter into roughly 1-inch balls. You should be able to make about 6-8 energy balls with each mix-in. Sprinkle some sea salt flakes on top. You can also just sprinkle regular salt but just use a small pinch.
- Enjoy immediately, and store any leftovers in a covered container in the refrigerator.
