Happy Monday friends! Today I want to share a healthy, easy recipe that you can make during the holidays. It seems like most traditional recipes this time of year are full of sugar, fat and other unhealthy ingredients. Am I right? Ingredients
- 1/3 cup crushed pecans
- 1/4 cup plus 2 tablespoons extra-virgin olive oil
- 3 tablespoons white wine vinegar
- 1 small shallot, minced (2 tablespoons)
- Salt and freshly ground pepper
- 4 cups Riceland Brown Rice
- 1 cup cooked farro
- 1/2 cup pomegranate seeds (from 1 pomegranate)
Instructions
*Make Ahead Tip: The salad without the pecans can be refrigerated overnight. Bring the salad to room temperature before serving.
