Happy Wednesday friends! Today I am teaming up with Whole Fruit Frozen fruit bars to share another easy, delicious recipe with you. Since Memorial weekend is less than 10 days away, I wanted to do a patriotic themed recipe. This is a perfect recipe to make with kids because they can each customize their own popsicle! And not to mention, it’s a healthy treat to eat by the pool or in the yard all summer!
A Few Tips
As mentioned, this recipe is very easy but it does require a few steps. Since Whole Fruit Frozen fruit bars are ready to eat, all you have to do is prepare the toppings. For the chocolate, I went with white chocolate chips but you can choose ANY type of chocolate. There are various methods to melting chocolate but I went with stove top heating.
For the toppings I cut out stars from watermelon slices (using these cutters) and used frozen organic wild blueberries. I like these blueberries because they are much smaller and easier to handle. For the crushed pecans I went with Georgia grown Schermer Pecans. Keep in mind you can also use any nut! Almonds or peanuts would also taste delicious as a topping!
Lastly, make sure you move quickly when handling the popsicles and that you give the toppings enough time to freeze on the popsicles. If not, the toppings will go all over the place!

Ingredients
- 1 box Strawberry Whole Fruit Frozen Fruit Bars
- 1 box Coconut Whole Fruit Frozen Fruit Bars
- 1/2 cup white chocolate chips, to melt
- 1/4 cup crushed pecans
- 1/4 cup blueberries
- 1 slice watermelon, cut into stars
- 1 teaspoon honey
- Saucepan, bowl, pan and parchment paper
Instructions
- Bring about an inch of water to a simmer in your saucepan. Set a heatproof bowl in the mouth of the pot, making sure the water doesn’t touch the bottom of the bowl. Stir chocolate occasionally as it softens.
- While chocolate is melting, prepare other toppings. Cut out stars from watermelon, set out blueberries, honey and pecans.
- Place popsicles of choice on pan covered in parchment paper. Use spoon to drip melted chocolate on top of popsicles (be careful it’s hot!). Quickly add toppings.
- Top popsicles of choice with honey. Add toppings.
- Place pan with popsicles back into freezer for 20-30 minutes to allow toppings to freeze. After toppings are frozen secure, enjoy with family!
