Happy Thursday friends! Today I want to share a delicious recipe featuring my favorite Autumn Glory Apples. And you will never believe how healthy it is! I created this recipe with all natural, minimal ingredients so you can enjoy it whenever. Autumn Glory Apples have such a natural sweetness to them that you don’t need any extra sugar when you add them to your recipes! Speaking of, are you familiar with Autumn Glory Apples? If you have been following Peaches to Pearls for some time now, you’ve definitely heard of them! I have been enjoying these apples for years now and never get tired of them! It is actually my #1 go-to snack when I’m pregnant! In my opinion what makes Autumn Glory Apples better than the rest is their natural sweet cinnamon taste. That’s why I chose them for this specific recipe!
A Few Tips
Before we dive into the actual recipe, I want to share a few tips. This recipe is super versatile because you can literally eat it for breakfast, dessert or as a snack. I topped mine with a scoop of plain Greek yogurt to make it a perfect breakfast but you can also top it with a scoop of ice cream to make it a dessert. You can also throw it on top of a smoothie or yogurt bowl to give your bowl extra flavor and texture.
In regards to the ingredients there are a few changes you can make according to what you have at home. The recipe calls for almond butter because it’s what I love to eat and what I have on hand. You can easily substitute for peanut butter. If someone in your home is allergic to nuts, you can always use sunflower butter! Also, I added different grains to this recipe to load it up with fiber, protein and vitamins. A few that aren’t too common are- hemp seeds which are high in omega-3 fatty acids and amaranth which are loaded with B vitamins and amino acids. If you cannot find these just leave them out!
I used mini (0.5 qt) enameled cast iron dutch ovens to bake these but you can use whatever you want. The recipe is designed to make two of these so keep that in mind when you are measuring everything out.

Ingredients
- 2 mini (0.5 qt) enameled cast iron dutch ovens
- 2 Autumn Glory Apples, peeled and diced
- 1/2 lemon, juiced
- 1 tablespoon flour
- 1 cup old fashioned oats
- 1 teaspoon hemp seeds
- 1 teaspoon amaranth seeds
- 1/2 cup ground flaxseeds
- 1/2 cup smooth almond butter
- 1/3 cup honey
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- Optional: 1 tablespoon salted butter, melted
Instructions
- In a medium bowl mix diced apples with lemon juice and flour. Optional: If you want extra flavor in your recipe, add melted butter over apples.
- In a medium bowl mix oats, flaxseed, almond butter, honey, vanilla and salt. Mix until everything is integrated.
- Distribute apple mixture into each mini cast iron (as pictured above). Cover with oat mixture.
- If warm recipe is desired, pop into oven and bake on 350 for 10 minutes. Top with yogurt or ice cream. Enjoy!
