Happy Wednesday friends! Let’s continue celebrating Hispanic Heritage Month with another delicious recipe with my friends at Rio Luna Organic Peppers. In case you missed it, last week I featured a fall themed pomegranate salsa. This passion fruit cocktail would actually pair perfectly with that salsa! I hope you enjoy making it and enjoy drinking it even more!
A Few Tips
For this recipe I decided to use Rio Luna Organic Nacho Sliced Jalapeños. I chose these because they are super easy to handle (since they come sliced) and they taste incredibly fresh. I actually threw a little spoonful of the liquid into this cocktail to give it a little extra jalapeño flavor! Rio Luna Jalapeños don’t only provide a rich, aromatic flavor, but they’re also certified organic, non-GMO, kosher, fat free, low calorie and cholesterol free!
Keep in mind, you have full control of the amount of heat this cocktail packs. The Rio Luna Organic Jalapeños have a handy heat index meter on the packaging that will help guide you. If you want more heat, add more jalapeños to the vodka mix. I added 5 and it was the perfect amount of heat.
Another tip, when it comes to the passionfruit juice, fresh is best but sometimes impossible to find. Unfortunately, that may not be possible depending where you live. I could not find fresh passion fruit in Atlanta but I found a pretty fresh juice in a bottle at a farmer’s market! Try checking in the Latin Foods section for your best chance of finding a good passion fruit juice.
Ingredients:
For Jalapeño Vodka
- 4-5 slices Rio Luna Organic Jalapeños, add more for stronger heat
- 8 oz vodka
For Passion Fruit Cocktail
- 2 oz jalapeño infused vodka
- 1 egg white
- 3/4 oz simple syrup
- 1 oz passion fruit juice
- 3 jalapeño slices
Instructions
- Begin by making Jalapeño Vodka ahead of time. Combine the sliced Rio Luna Organic Jalapeños and the vodka in a jar and shake. Allow to sit for 8 to 24 hours. The longer it sits the stronger it will get! If you want just a hint of jalapeño, just let sit for an hour.
- In cocktail glass, add all ingredients with fresh ice.
- Stir with a barspoon then garnish jalapeño slices. Enjoy!
